How to do it

  1. Pull your item-level sales for a period — quantity sold per dish.
  2. Know each plate cost. Menu price minus plate cost is the contribution margin.
  3. Find the averages. Average units sold and average contribution margin become your dividing lines.
  4. Plot every item into a quadrant.
  5. Act by quadrant using the moves above.
